Summer is a season that’s filled with days at the lake, weekends at the cabin, grill-outs and potlucks. While you’d think that summer, with all of its fresh produce and farmers market finds, would be an easy time to stick to healthy eating habits, that’s not always the case. All too often, healthy eating gets placed on the back burner in large part due to all of the summer gatherings going on. BUT it doesn’t have to be that way! You can live it up this summer and still stay focused on achieving (or maintaining) optimal health. Everyone loves a BLT!
There’s just something so tasty about the combination of bacon, lettuce and tomato. Add to that tender chicken chunks, creamy avocado oil mayo, red onion, fresh chives and avocado and serve it up however you please for a scrumptious summertime lunch. I personally love keeping this recipe light and letting the BLT Chicken Salad be the highlight of the meal by serving it tucked in a crisp lettuce leaf or on top of greens. Now if you’re looking for something more traditional and hearty, by all means feel free to serve it between two slices of toasted bread or in a wrap. I mean, sometimes ya just need a sandwich…am I right?!

How to make the perfect chicken breast…

What’s the healthiest kind of bacon?
That’s a good question! Not all bacon is created equal. I repeat, not all bacon is created equal. While some may think turkey bacon is the best and it can be if that’s what you prefer, it’s not typically our go-to when it comes to adding bacon to recipes. Here’s what we look for when shopping around for bacon.
- Preferably organic.
- Preferably no sugars added.
- No nitrates or nitrites.
- Clean ingredients list (here is an example: Organic Pork, Water, Sea Salt. Less than 2% of: Celery Powder).
- From humanely raised pork that are raised with plenty of space to move around and engage in natural behaviors.

- 3 cups cubed cooked chicken
- 4 strips no sugar bacon, cooked to crisp & chopped
- ⅓ cup diced red onion
- ½ cup sliced grape tomatoes
- 3 Tbsp. chives, chopped
- ⅓–½ cup mayonnaise
- Salt and pepper to taste
- 8–10 lettuce leaves (butter or leaf lettuce)
- Sliced avocado
- Combine chicken and remaining ingredients in a bowl. Add mayo and gently stir to combine.
- Serve chicken salad and avocado slice in a lettuce leaf, over a bed of mixed greens, on top of cucumber slices or your favorite crackers or toasted bread (not Whole30). Top with chives and crumbled bacon if you wish.
